Sigree, in Devanagari, means a simple iron vessel that holds a charcoal fire over which food is cooked. In the good old days, the host and guest enjoyed each other's warm company over jugs of homemade wine while the food cooked slowly over its smoldering embers. A friendship grew, bonds deepened, stimulated by the rising aroma of meat and vegetables over the slow fire. Time. That was the magic ingredient in cooking which our age had sadly lost. Until now.
Returning to the simple magnificence and wholesomeness of Indian cuisine is like returning to a lost way of life. When flavor was not smothered under spices, sauces and gravies like in today's impatient age of fast food. Just the season's fresh produce, tender meats and carefully selected spices. Marinated through the long night. And cooked on the lingering charcoal fire. Till food reached sublime ripeness and each spice surrendered its fragrant secrets.
Sigree is our small endeavor to recreate an age and cuisine that was. We will never know what the people of the past will think of our efforts. But we hope we have helped this age enjoy the taste of timelessness.
